Pri\u010da se da se jednog jutra pojavio u restoranu hotela Valdorf tra\u017eec\u0301i obilan doru\u010dak koji je sam sastavio, dajuc\u0301i \u017eivot benediktinskim jajima kakvima ih danas poznajemo.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Tokom decenija nastalo je bezbroj varijacija prvobitnog recepta. U Kanadi i Okeaniji se umesto \u0161unke, po\u0161irano jaje dopunjava lososom i tamo se ova otmena varijanta zove \u201djaja rojal\u201d. U Latinskoj Americi se po\u0161irana jaja slu\u017ee sa salsom i avokadom, a u vegetarijanskoj\u00a0 varijanti koja se zove \u201djaja florentin\u201d, \u0161unku je zamenio spana\u0107.\u00a0<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">\u0160ta su to po\u0161irana jaja?<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Koja god verzija ovog specijaliteta bila, njegova osnova su po\u0161irana jaja. Po\u0161iranje je specijalna metoda pripreme namirnica koja se zasniva na sporom kuvanju u vru\u0107oj, skoro klju\u010daloj vodi. Po\u0161iranje jaja zahteva spretnost i iskustvo. Trik je u tome da se ne dozvoli razdvajanje belanceta i \u017eumanceta tokom ovakvog kuvanja jajeta, ve\u0107 je neophodno da \u017eumance ostane obavijeno belancetom. Rezultat dobro po\u0161iranog jajeta je \u010dvrsto belance i meko \u017eumance, koje iscuri \u010dim se prese\u010de.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Kako se po\u0161iraju jaja?<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">U lonac sipati vodu i u nju dodati dve-tri ka\u0161ike sir\u0107eta. Vodu zagrevati do temperature tik ispod vrenja, pa blago ulititi u nju jedno po jedno jaje. Najbolje je to uraditi direktno iz ljuske, odmah iznad povr\u0161ine vode. Tako smanjujemo rizik od toga da jaje <\/span><span style=\"font-weight: 400;\">\u00a0\u201cbu\u0107ne\u201d u vodu i tako izgubi oblik ili da se pome\u0161a \u017eumance i belance. Jaja kuvati 3 minuta, a zatim ih izvaditi\u00a0 kutla\u010dom sa rupicama i dobro ocediti. Belance treba da bude \u010dvrsto, a \u017eumance da ostane te\u010dno, kao kod rovito kuvanog jajeta.
